We’re gonna watch the Super Bowl this evening. I read on a friend’s Facebook status about her son wanting her to make beignets and I was envious. So I started looking for recipes for gluten free beignets. I found this one. For the flour mix, I used 1/4 cup coconut flour, 3/4 cup corn starch, 1 cup white rice flour and 1 tsp xanthan gum. I added a little more milk because the coconut flour absorbs liquid so quickly.
They were so delicious and satisfying. My husband raved and said that I should add coconut flour to everything.
Apple Cinnamon Pancakes

James decided last night that he wanted to plan the menu for breakfast. He asked for pancakes so I asked, “Blueberry or Apple Cinnamon?” He chose the latter. He also wanted enough for Abby, Matt and Andrew to eat with us. So I made 4 batches with his help. I love that although it is his special time to cook, he is thinking about others.
1 large egg
1 cup flour (I use 1/2 cup freshly ground buckwheat, 1/4 cup coconut flour, 1/4 cup corn starch)
3/4 cup milk ( I add a little extra if it doesn’t stir up easily. Coconut flour absorbs liquids rapidly)
1 T packed brown sugar
2 T vegetable oil
3 teaspoons baking powder
1/4 t salt
1/2 cup diced apples
1 1/2 t cinnamon or to taste
Beat egg until fluffy. Beat in remaining ingredients until smooth.
Heat griddle to 325 degrees. For each pancake, pour slightly less than 1/4 cup batter onto hot griddle. Cook pancakes until bubbly on top, puffed and dry around edges. Turn and cook other side until golden brown.
